Limón relleno de una mayonesa de sardina

Ingredients
4 lemons, 2 cans of sardines in oil, few spoonfuls of mayonnaise, parsley, three small onions, 2 tsp mustard, 2 tsp lemon juice, 1 stalk of celery, 2 tbsp pine nuts, 10 green olives without seeds.
Preparation
Halve the lemons and squeeze them. Cut a cap from the bottom or top so they can stand. Remove the remaining pulp and membranes from the lemons. This is an intensive job because after squeezing, the skins are not easily removed. With a sharp knife and patience, it eventually works. Toast the pine nuts in a dry skillet. Finely chop the parsley and celery as well as the onions. Cut the olives into rings. Drain the sardines and mix the sardines with the mustard, mayonnaise, onions, celery, parsley, olives and add generously black pepper and 2 tsp lemon juice. Use a fork to get it all fairly fine.
Serve
Stir the pine nuts into the mixture and stuff the lemon halves. Place on a plate and garnish as desired with chives or another herb. Delicious as an appetizer with toast or toasted bread.
