Serrano bonbon stuffed with prawns

Bombón de Serrano

ingredients for 4 persons
Ingredients
12 slices of serrano ham, 12 cooked prawns in pieces, 100 grams of asparagus tips in pieces, 1 pickled red bell bell pepper in pieces, 1 shallot very finely chopped, (possibly black olives, capers),arugula, green apple, mayonnaise, crème fraiche, lime, salt and pepper.

Preparation
Mix the prawns with the asparagus tips, bell bell pepper, shallot and possibly finely chopped olives and capers. Add a little mayonnaise and crème fraiche and season with salt, pepper and lime. You can also possibly add a little (not too much!) chopped parsley/chives for color.

Make a dressing of olive oil with cider vinegar, salt, pepper and add a little sugar.

Serve
Place two slices of serrano ham vertically and one slice of serrano ham horizontally (cross shape) spoon a portion of the prawn mixture in the center and fold closed first vertically and then horizontally and turn over.

Cut the green apple into round slices toward the core. Then shred the apple slices into fine matchsticks. Put them briefly in the olive oil/apple dressing (but be careful not to leave them too long as they will become limp!)

On each plate, place a mound of arugula a little dressing and on top the bonbon. Decorate with thin green apple.
