Soup of almonds

Sopa del amendras

ingredients
150 grams of almonds, 3 pieces of stale bread, 1 teaspoon of ground cumin, 1 tablespoon of parsley, 2 strands of saffron, 3 cloves of garlic, dash of olive oil, 250 cl of chicken broth , salt

Preparation
In a pan with a little olive oil, lightly fry the almonds and garlic cloves. Then put them in a blender with the parsley, the saffron (which you first soak in lukewarm water), a little salt and a teaspoon of cumin. In the same pan, fry the bread pieces lightly brown as well and add to the food mixer.

Mix everything well and and then put the mixture back into the pan. Add the chicken stock ( little by little) until it becomes a creamy substance and simmer gently. Add salt to taste. If the soup is still too thick, add some water and if too thin, add some pieces of bread.

Finish
Decorate with dash of olive oil.

Wonderfully warm but also cold on a sunny day!
