Bacalao cion una salsa meditereaneo/moro
ingredients for 4 people
1 large onion, peeled and chopped, 2 stalks of celery coarsely chopped , 2 cloves of garlic chopped, 25 gr raisins, 75 ml olive oil, 1 tsp capers, 1 anchovy fillet, 50 gr green olives, 1 can of 400gr tomatoes, drained(collect the liquid) and chopped, salt and pepper, 4 cod fillets 150-175g, 1 egg, flour, (seasoned) breadcrumbs
Preparation
Fry the onion and garlic in the olive oil over low heat, stirring occasionally, until soft. Add the celery, raisins, anchovy fillet, capers, olives and the chopped tomato with tomato liquid. Let the sauce reduce gently (about 15 minutes). Taste and add salt/pepper if necessary.
Meanwhile, bread the cod fillets. Break 1 egg loose on a flat plate, on another flat plate place the flour and breadcrumbs. Wrap the steaks first through the flour then the egg and then the breadcrumbs. Fry the steaks for about 15 minutes in some olive oil and butter.
Serving
Place the steaks on the plate and spoon some sauce next to them. Delicious with saffron rice or (black) pasta.
