Orange butter with cake

Mantequilla de naranja

ingredients for 12 people
5 tbsp fresh orange juice, 1 ½ teaspoons finely grated orange zest, 80 gr caster sugar, 100 gr butter, 6 egg yolks beaten loose

Preparation
Heat the orange juice, orange zest, sugar and butter in a saucepan over medium heat. Stir until the sugar is completely dissolved. Remove the pan from the heat and stir in the egg yolks. Mix everything well. Return the pan to a very low heat and continue stirring for about 8 min until the mixture is thick and glossy and sticks to the rounded side of spoon, do not let the mixture come to a boil or it will separate. Allow the mixture to cool. Cover and refrigerate until use.

Cut the cakes in half horizontally and spread some butter between them. Decorate with some powdered sugar. Serve with a scoop of vanilla ice cream, a glass of Grand Marnier and/or fruits (raspberries, blackberries, berries)
