Ensaladilla Rusa

Ingredients
1 small carrot, 40 grams frozen peas, 4 artichoke hearts, 1 tablespoon pickled red bell bell pepper, 6 teaspoons lemon juice, 125 grams mayonnaise, knife tip sugar, 2 teaspoons red onion, dash(s) anis/pernod, 12 cooked prawns, black fish eggs.
Preparation
Cut the carrot into small cubes and cook briefly so that it is still a little crunchy, then cook the peas, drain the vegetables well. Chop the pickled bell bell pepper into small pieces as well as the onion. In a bowl, mix the greens and onion with the mayonnaise, lemon juice, anis/pernod and sugar. Taste and season with salt/pepper.
Serving
Place the prawns in an attractive dish and drape the artichoke hearts(quartered if desired) next to them. Top the greens with mayonnaise and garnish with a bit of black fish eggs. Delicious with toast or toasted bread.
